1 c, persimmon pulp,remove stem only
1 c. sugar
2 T oil
1 well beaten egg
1/2 tsp. salt
1/2 teas. cinnamon
1 c. flour
1 tsp. baking soda
1/2 c. milk
1/2 cup chopped nuts

Directions:
Directions:
Mix ingredients in the order given. Pour in small pan or dish. Bake 45 minutes at 350 degree oven. Serve hot, with lemon curd, or whipped cream (or both). It is best to put the persimmons in blender to get a good fine consistency.

Be sure your persimmons are ripe, has better flavor. We have a neighbor who has a great tree. She puts them in a wooden crate alongside the road with the word "free" on the box. I am amazed, people take what they need leaving the rest for others.
