1 lb red skin potatoes

6-8 garlic cloves

2 tbsp fresh Italian parsley

1/2 - 3/4 cup olive oil or half a stick of butter

Salt and pepper to taste

Directions:
You start with about a pound of red skinned potatoes. You remove major blemishes but leave most of the skin on. Boil them in a 3 quart pan until soft.

In a medium skillet heat up about half a cup of olive oil or half a stick of butter.

Before oil gets too hot add salt and pepper to taste and also add 6-8 garlic cloves or minced garlic with 2 tbsp of chopped parsley.

The trick is not to let the garlic get too roasted. As soon it gets a little golden turn off the heat.

Remove most but not all of the water from the potatoes ( so it doesn't get too dry later) and add the garlic and oil mix to the potatoes.

Mash the potatoes and place in a serving bowl. Decorate with more fresh parsley.

This side dish goes with almost anything you'd like. It takes minutes to prepare and it's a healthy treat that you don't have to be a chef to prepare.
