1 c. mashed potatoes
1/2 c. butter
1/2 c. sugar
1 tbsp. salt
1 c. potato water
1 egg
1 pkg. yeast
flour (enough to make soft dough)
cream
cinnamon
extra butter and brown sugar

Directions:
Directions:
Cream together mashed potatoes, butter, brown sugar and salt. Dissolve yeast in the warm potato water. Add the egg and yeast mixture to creamed mixture. Now add enough flour to the mixture to make a soft dough. Grease dough and let rise to double in size. Once dough has doubled place it in greased pan and let rise again. Punch down and add additional butter, brown sugar and some cream in the depressions. Bake at 350-400 º.
When done slide out of pan and dribble with cream and cinnamon. Turn hot pan over on sugar cake and let steam.

As a child Johnsie helped me clean out the recipe drawer. This recipe did not have a name, so she asked me the name. This is what she wrote on the top of the recipe- Light Bow Sugarcake.
