4 c. flour
2 c. sugar
1/2 t. salt
1 1/2 c. oleo (3 sticks)
8 c. zucchini (peel & slice like apples, remove all seeds)
2/3 c. lemon juice
1/2 c. sugar
1/4 t. nutmeg
1 t. cinnamon

Directions:
Directions:
Combine flour, sugar, salt & oleo until crumbly. Set aside. Cook until tender zucchini with lemon juice. Add sugar, nutmeg, cinnamon and simmer a few minutes. Add 1/2 c. of crumb mixture to thicken. Cool. Pat 1/2 crumb mixture into 9 x 13 pan, bake at 375º for 10 minutes. Pour on zucchini mixture. Sprinkle remaining crumb mixture on top. Sprinkle with cinnamon and bake at 375º for 30 minutes. Serves 20.
