Hard Boiled Eggs - 1/2-1 for each person
2 T. Butter or margarine
1t. Oil
2 T. Flour
2 C. Milk
Salt and Pepper to taste
4-6 Slices bread

Directions:
Directions:
Hard Boil Eggs. Cool somewhat to de-shell
Melt Butter or Margarine with oil. Add flour and mix with fork or whisk then add Milk and blend till smooth and silky. Add seasonings. Toast bread , butter and cut corner to corner diagonally. Place 2 on plate. Slice eggs lengthwise and carefully add to white sauce so not to separate yolks. Place eggs carefully in white sauce . Serve over toast. Sprinkle a bit of paperika for color. Serve while hot.

This is nice for breakfast OR supper. Can add a dish of fruit on the side.
