1 beef rump or round roast
2 T. oil
2 large sweet onions cut into 1/4 in. slices
6 T. butter, softened, divided
5 c. water
1/2 c. soy sauce
1 envelope onion soup mix
1 garlic clove, minced
1 tsp. browning sauce (optional)
1 loaf French bread
1 c. shredded Swiss cheese

1. Brown roast on all sides in oil. Drain. In large skillet saute onions in 2 T. of butter until tender. Add water, soy sauce, soup mix, garlic and browning sauce. Pour over roast. Cover and bake at 325º for 2 1/2 hrs. or until tender.

2. Let stand for 10 mins. before slicing. Return meat to pan juices. Slice bread in half lengthwise; cut into 3-in. sections. Spread remaining butter over bread.

3. Place bread on baking sheet. Broil 4-6 in. from heat for 2-3 mins. or until golden. Top with beef and onions. Sprinkle with cheese. Broil again for 1-2 mins. or until cheese is melted.
