1/2 c chopped onion
2 T olive oil
3/4 lb zucchini, cut into 1/2 inch pieces
1 1/2 c broth (chicken or veggie)
1 1/2 c chopped fresh Cilantro OR Basil
2 t lemon juice, or to taste
package soft tofu (Optional, for thickening. Tofu haters, you can't taste it)

In a large saucepan cook the onion in oil over moderately low heat. Add zuke and s and p, cook for about 4 minutes, stirring occasionally. Add the broth plus 1 1/4 c water. Simmer, covered, for about 10 min, or until the zuke is tender. Remove from heat, stir in the herb of choice, and let the mixture cool. Puree (including tofu if you're adding it) and then stir in lemon juice. Serve warm, room temp or chilled. It's all good
