French Lentil Soup Recipe

1 T olive oil (or bacon grease)
1 large onion, diced
1 large carrot, diced
5 plum tomatoes, seeded and diced (I just used canned)
4 cloves garlic, minced
2 t dried tarragon
1 t dried thyme
1 t paprika
6 c water or vegetable broth (or chicken stock)
2 c French lentils (use French for best texture)
2 bay leaves
1 1/2 t salt
several pinches ground black pepper
brats (optional)

Directions:
Directions:
Preheat a large soup pot over medium heat. Saute the onion and carrots for about 10 minutes, until the onions have browned a bit. Add the garlic, tarragon, thyme, and paprika, and saute for about 2 more min. Add the tomatoes and stir to deglaze the pot. Cover and cook 5 min.

Add the liquid, lentils, bay leaves, salt and pepper. Cover, bring to a boil, then reduce heat to simmer, cover and cook for 45 minutes or until the lentils are tender. If the soup looks too thin, simmer longer... too thick add more liquid. Serve with crusty bread.

And if you have Lamb Brats, slice em up, saute them and add them to your bowl.
