1 large red pepper
2 Tbsp. olive oil
1-1/2 lb. asparagus, trimmed and cut diagonally into 1-1/2" pieces
2 cloves garlic, minced
3/4 tsp. salt
1/4 tsp. pepper
1 Tbsp. grated lemon zest

Directions:
Cut out a 1-1/2" star from the red pepper. Set aside. Cut remaining pepper into 1/4" pieces. In a 12" skillet, heat oil over medium-high heat. Add asparagus, pepper pieces, garlic, salt and pepper; cook, stirring often, until just tender, about 5 minutes. Remove from heat; stir in zest. Arrange on serving platter in a "tree" shape. Garnish with pepper "star."
