4-5# venison roast
3 tblsp garlic powder
1/2 c tender quick
6 tblsp sugar
1 1/2 tsp pepper
3 1/2 c water
2 tblsp pepper
1 tblsp ground coriander
brining needle

Directions:
Directions:
1. Trim fat. best is meat from hind quarter
2. Make brine with ingredients 2-5. Bring to boil and cool thoroughly.
3. Inject 1/6 of the liquid throughout the meat.
4. Once a day, inject the meat with 1/6 of the liquid and return to refrig in a covered container
5. After 5 days, rinse the meat and soak in water for 10 min. Drain. then rinse and soak again.
6. Combine the remaining coriander and pepper and rub the roast
7. Preheat the oven to 150. Place on a broiler pan in middle of oven and cook for 60min.
8. raise oven temp to 200 and bake 5-9hrs till the internal temp is 170
9. Let cool in clean dry towel Then slice thinly.
