3 lb. potatoes, peeled and quartered
1-3/4 tsp. salt, divided
2 Tbsp. butter
1 Tbsp. olive oil
2 medium onions. diced
4 cloves garlic, minced
2 tsp. chopped fresh rosemary
1/2 cup butter
3/4 cup half and half
3/4 cup Gorgonzola (or blue) cheese
3/4 tsp. pepper
Garnish: fresh rosemary sprigs

Directions:

Bring potatoes, 1 tsp. salt, and water to boil in a covered Dutch oven; cook for 20 - 25 minutes or until tender. Drain and keep warm.

Melt 2 Tbsp. butter with oil in a skillet over medium heat; add onion and cook, stirring often, 12 - 17 minutes or until tender. Add garlic and cook 3 minutes more. Stir in rosemary and remove from heat.

Mash potatoes and stir in 1/2 cup butter, half and half, and cheese. Spoon enough potato mixture into oven-proof baking dish to fill bottom. Pipe (fancy!) or dollop the remaining mixture over the top so that it looks like Tastee Freeze!

Broil 3 inches from heat for 5 minutes or until lightly browned.
