3/4 lb. tomatoes, seeded, diced (2 cups)
1 large cucumber, peeled, seeded, diced (2 cups)
2 cups red pepper, diced
1/4 cup Kalamata olives, halved
1/4 cup onions, diced
3 Tbsp. fresh Italian (flat) parsley
1/4 cup crumbled feta cheese (about 2 oz.)
3 Tbsp. extra-virgin olive oil
1-1/2 tsp. dried oregano
3 Tbsp. red wine vinegar
3 Tbsp. sugar
Parmesan cheese to taste (optional)

Directions:

Toss first 6 ingredients in medium bowl. Gently mix in feta cheese and parsley. Season with salt and pepper. In a separate bowl, combine olive oil, oregano, vinegar and sugar. Add a bit of Parmesan, if desired. Mix well and pour over salad.
