1 10oz pkg frozen okra or 11/2 cups fresh, cooked okra, drained
1 cup all-purpose flour
2 tsp baking powder
1 tsp salt
1/8 tsp pepper
2 eggs, beaten
1 tsp onion, minced
1 tbsp melted butter or margarine
1/2 cup evaporated milk
1/2 cup oil

Directions:
Directions:
Cook frozen okra according to pkg directions; drain and set aside.
Combine dry ingredients, stir in eggs, onion, butter and milk. Fold okra into batter. Drop batter by tablespoonsful into oil heated to 375º. Cook 2 minutes on each side or until lightly browned. Drain on paper towels.
