1 large soup/cereal bowl
1-2 slices of toasted bread
Butter to taste,spread on toast
1-2 c. scalded milk
Green onions, sliced
Grated cheddar cheese

Directions:

Place buttered and toasted bread in bowl. Pour in scalded milk. Add onions, and cheese for topping (cheese should melt from the heat of the milk).

My grand mother, Marie Rollins served this treat to me when I was a young child. It was special due to the fact, everything was homemade, from the farm. Milk was raw. The words "pasteurized-homogenized" were not in our vocabulary. Butter was fresh churned. She had a cast iron stove, fed with coal or wood to cook her family meals. The stove was kept shiny with a mixture of bacon drippings, & soot, applied to the surfaces with a rag. Trim was chrome & pewter. There was a warming space/oven above the cooking surface, with doors which closed down. A collectors item now. My, have we come a long way with our kitchen appliances!
