1/2 cup Sun-Dried Tomatoes, chopped
1/4 cup Olive Oil
6 Roma Tomatoes, chopped
3 Garlic Cloves, minced
2 tbsp. Balsamic Vinegar
1/4 cup Fresh Basil, chopped and stems removed
1/4 tsp. Salt
1/4 tsp. Freshly Ground Pepper
1 French Baguette
2 cups Shredded Mozzarella Cheese

Directions:

Two hours before preparing the mixture, soak dried tomatoes in olive oil. Preheat the oven temperature to broil. In a large bowl, combine the roma tomatoes, sun-dried tomatoes, olive oil, garlic, vinegar, basil, salt and pepper. Let stand at least 10 minutes. Cut the baguette into 3/4 inch slices. Place a single layer on a baking sheet and toast until golden, about 2 minutes. Place tomato mixture on the baguette slices. Cover with cheese. Broil for 5 minutes until cheese melts. Serve hot.
