4 lbs carrots, cut into big chunks, 1 sweet onion, wedged and somewhat separated, 1/2 stick butter (melted & browned) 4 or 5 Tbls olive oil, salt, pepper, Herbs de provence to taste, smidgen of garlic powder

Directions:
Directions:
Preheat oven to 400 º Brown butter in a skillet. Add olive oil and other spices. In a large pan or cookie sheet place cut up carrots and onions. Toss well with hands the butter and spice mixture. Roast uncovered for about 40 minutes or until tender.
