1 lb. Italian sausage (hot or mild)
1 cup chopped onions
1 clove garlic
5 cups beef broth
2/3 cup water
2 cups canned chopped peeled tomatoes
1 cup thinly sliced carrots
1/2 tsp. basil
1/2 tsp. oregano
1 whole bay leaf
8 oz can tomato sauce
1 1/2 cups sliced zucchini
8 oz (2 cups) cheese tortellini (frozen or boxed)
3 Tbsp. chopped parsley
1 medium green bell pepper (chopped)
grated Parmesan cheese for topping (optional)
Directions:
Directions:
Remove skin from sausage. In a 5 quart Dutch over, brown sausage and drain. Saute onions and garlic in one tablespoon of sausage drippings until tender. Add beef broth, tomatoes, carrots, basil, oregano, bay leaf, tomato sauce, and drained sausage. Bring to a boil. Reduce heat and simmer uncovered for 30 minutes. Skim fat from top of soup. Stir in zucchini, tortellini, parsley, and green pepper. Remove bay leaf. Garnish each serving with Parmesan cheese, if you like.
