1/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon baking powder
2 eggs separated
1-1/2 cups (3 ears) fresh corn, cut from cob
1/4 teaspoon pepper
vegetable oil

Directions:
Directions:
Mix first 3 ingredients. Beat egg yolks, then stir in corn, pepper, and flour mixture. Stir in 1 tablespoon oil. Beat egg whites until stiff but not dry. Fold into mixture. Heat about 1/2"-deep oil in skillet. Drop batter by tablespoonfuls and fry, turning once, until golden brown. Drain on paper towel. Serve with maple syrup, if desired. Makes about 18.
