2 ready made pie crusts (Papa Murphy's preferred)
1/2 lb Hot Italian Sausage
1 cup sliced yellow onions
1/2 cup thinly sliced red bell peppers
1/2 cup thinly sliced green bell peppers
1 TBL garlic
1 tsp Italian seasoning
3 oz pkg of sliced pepperoni
1/2 cup sliced black olives (if desired)
1 pkg of sliced provolone cheese
2 cups grated mozzarella
1 lrg egg beaten with 1 TBL of water to make egg wash
1 cup finely grate Parmesan

Preheat oven to 375º. Grease large baking sheet if not using Papa Murphy's baking trays. In a lrg skillet, cook the sausage over medium high heat until browned and the fat is rendered, about 5 minutes. Remove browned sausage and drain well on paper towels. Discard all but 1 TBL of fat from pan. Add the onions, peppers and cook, stirring until very soft (4 -5 minutes). Add garlic and Italian seasoning. Cook, stirring for 1 minute. Remove from heat and cool.
Take prepared pizza dough and shape it into rectangle shape. You may leave the dough on the baking tray. Spread half of the cooled sausage mixture across the dough leaving a 1 inch border. Overlapping slightly layer the pepperoni, olives, provolone cheese and mozzarella over the top. Using a pastry brush, paint the border of one long edge with egg wash. Starting at the opposite long end with egg wash, roll up the dough into a cylinder, pinching the edges to seal. Place on baking sheet if not using Papa Murphy's baking tray.
Brush the top of each Stromboli with egg wash. Bake until nearly completely golden brown and starting to crisp, about 20 minutes. Sprinkle each stromboli with Parmesan cheese and return to oven briefly (2 minutes). Remove from oven and let stand 10 minutes. Slice thickly and serve.

You can make your own pizza dough, but it's much faster to buy one prepared for you on tray. Make & Take pizza places will sell a lrg pizza dough on tray. Fill with your own choice of ingredients.
