2 lbs. boneless chicken thighs
oil (for frying)
cornstarch (for dusting, optional)
16 oz. bag broccoli
1 garlic clove, minced
1/4 tsp. ginger
3/4 tsp. crushed red pepper flakes
1/4 c. apple juice
1/3 c. brown sugar
2 T. ketchup
1 T. cider vinegar
1/2 c. water
1/3 c. soy sauce

Directions:

1. Steam broccoli.
2. Cut chicken into bite-sized pieces, and if you choose, lightly dust with cornstarch. Heat oil in pan and fry chicken bits in batches until lightly browned. Drain on paper towels and set aside.
3. In a bowl combine all sauce ingredients. Pour into pan and bring to a boil. Add chicken bits back to the pan, reduce the heat and simmer for 10 mins. Add in broccoli.
4. Serve with rice or noodles.

This is also known as 'Mall Chicken' named after the fast-food Chinese places in the mall. Our kids call it 'Chinese Chicken' and is Ellie's #1 requested meal.
