1 (101/4 oz.) can tomato soup,
reduced fat condensed, undiluted
1 T lemon juice
1 tsp. sugar
2 cloves garlic, minced
1/2 tsp salt, or to taste
6 c.1/2 inch zucchini slices
1 c. thinly sliced onions
1 c. coarsely chopped green bell peppers
1 c. sliced mushrooms
2 T grated Parmesan cheese

Directions:
Directions:
Combine soup. lemon juice, sugar, garlic and salt in large saucepan; mix well. Add zucchini, onion, bell pepper and mushrooms; mix well. Bring to boil; reduce heat. Cover and cook for 20-25 minutes, or until vegetables are crisp tender, stir occasionally. Sprinkle with cheese before serving.

A good diabetic recipe. If not your problem, add salt. I like to add Italian Seasoning to the recipe too. When your garden comes in you will LOVE THIS RECIPE. A good way to make the vegetable different when it is "coming out your ears" and the neighbors won't answer the door any longer..
