1 baked 9 in. pastry shell
8 c. medium strawberries
2/3 c. sugar
2 tbsp. cornstarch
Several drops red food coloring (optional)
Whipped cream (optional)

Directions:
Remove stems from strawberries. Cut any large strawberries in half or lengthwise; set aside.
For glaze, in a blender container or food processor bowl combine 1 c. of the strawberries and 2/3 c. water. Cover and blend or process until smooth. Add enough additional water to the mixture to equal 1 ½ c. In a medium saucepan combine sugar and cornstarch; stir in blended berry mixture. Cook and stir over medium heat unti the mixture is tickened and bubbly. Cook and stir 2 minutes more. If desired, stir in red food coloring. Cool for 10 minutes without stirring.
Spread about ¼ c. of the glaze over bottom and sides of baked pastry shell. Arrange strawberries, stem end down, in the pastry shell. Pour remaining glaze over strawberries. Fill crevices with more strawberries.
