1 large onion, sliced thin
2 Tbsp. olive oil
Salt and pepper to taste
4 Tbsp. butter
2 c. yellow summer squash, sliced thin
2 c. zucchini, sliced thin
1 large tomato, sliced
4 slices processed American cheese

Directions:
Directions:
Using a large stir fry pan, heat oil over medium-high heat. Stir in onion slices. Cook and stir until onions are transparent. Gradually add in the squash and zucchini, stirring it together with the onion. Put a lid on the pan and cook until the squash and zucchini are tender. Now slice and add the tomato. Add salt and pepper. Reduce the heat to simmer. Place the butter on top of the tomato slices. Put the cheese on top of the tomato. Replace the lid and simmer until the cheese is melted. Serve it right in the skillet.
