one large eggplant
2 large tomatoes
mixture of shredded Italian cheeses
olive oil
salt and pepper
fresh basil

Directions:
Directions:
Preheat oven to 400 degrees; slice eggplant (skin on) into 1/4 inch slices; brush each side with olive oil, salt and pepper, and place on baking sheet; roast on each side about 6 mintues or until tender; place sliced tomatoes and cheese on top and cook a few minutes more until cheese is melted; take out and put fresh chopped basil on top; eash and delicious!
