1 1/2 cups water
1 tsp curry powder
1/2 tsp salt
1 cup couscous
1/4 cup olive oil
3 tbsp fresh lemon juice
1/3 cup dried currants
1/4 cup chopped fresh cilantro
1/4 cup chopped green onions

Directions:
Directions:
Bring first 3 ingredients to boil in heavy medium saucepan. Mix in couscous. Remove from heat. Cover & let stand 5 minutes. Fluff couscous with fork. Mix oil & lemon juice in large bowl. Add couscous & remaining ingredients & toss gently. Season to taste with pepper. Cover & refrigerate until cold, at least 2 hours. (Can be prepared 2 days ahead. Keep chilled).
