1-1/2 cup dried navy beans
1 pinch salt
1 pinch baking soda
1 Tbsp. prepared mustard
1 Tbsp. ketchup
1/2 cup onion, chopped
1/4 lb. salt pork, sliced
1 Tbsp. brown sugar
2+ Tbsp. dark molasses

Directions:
Directions:
Soak the beans overnight, and then simmer with salt, soda, and mustard until tender. Drain beans, reserving cooking water. Add molasses, brown sugar, mustard, ketchup and onion. Add 1/2 cup of reserved cooking water. Pour bean mixture into a greased bean pot and top with salt pork. Cover and bake in a 250º oven for 6 to 9 hours, adding more of the reserved cooking water if beans look dry. Uncover for the last half hour of cooking.

I still love these beans, but nobody in South Texas will eat them. Here, people want PINTO beans, either refried, frijoles-style, or Ranch-style.
