1/2 cup shortening
1 1/2 cups brown sugar
1 egg
2 1/4 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup peeled and grated apple
1 cup raisins
1/2 teaspoon nutmeg
1/2 cup apple juice
1 cup chopped walnuts

ICING:
1/4 cup (1/2 stick) butter
1/4 cup packed brown sugar
1/4 teaspoon salt
1 1/2 cups powdered sugar
2 1/2 tablespoons light cream (half and half)

1. Mix all cookie ingredients together until blended well. Cover and refrigerate this mixture for 2 hours before baking.

2. Preheat oven to 375º. Lightly grease cookie sheets and drop cookie dough 2 inches apart on sheet. Bake for 8 to 10 minutes. Cool completely on wire racks before frosting.

3. In medium saucepan, melt first four icing ingredients together over medium heat until well combined. Add powdered sugar and cream; stir well. Frost cooled cookies.
