1 1/2 cup oil
2 cups sugar
3 eggs
3 cups sifted flour (all purpose)
1 tsp. salt
1 tsp. soda
1 tsp. baking powder
2 tsp. vanilla
3 large red apples, cut into small pieces
1 cup chopped pecans

Glaze:

1 stick butter
1/2 cup light brown sugar
2 tbsp. milk

Directions:

Combine oil, sugar, and eggs beating 3 min. @ med. speed. Sift together dry ingredients and add to the creamed mixture. Fold in vanilla, apples & pecans. Bake in a well greased and floured tube pan @ 350º for 1 hr. 20 min. cool. For the glaze, mix the ingredients in a small sauce pan and bring to a boil. Reduce heat and cook for 20 min. stirring often. Remove cooled cake from pan & pour hot glaze over the top of cake. The glaze will be thin & will soak into the cake. ( I use a tooth pick & poke lots of small holes on the top of the cake before pouring the glaze.)
