Filleted haddock meat, fresh or frozen
One sleeve of Ritz crackers
One stick of butter melted
Garlic powder
Pepper

Stuffing directions:
Crumble Ritz crackers into fine pieces. If you're smart, use the sleeve to crumble into before opening the sleeve.
Place crumbs into a mixing bowl, add half a stick of melted butter and tsp of garlic powder.
Mix with fingers or fork.

Assembly:
Take one piece of haddock, lay out on counter top or wax paper or foil, top the fillet with enough stuffing to then roll the fillet around stuffing, and then use toothpick to hold together.
Then place into casserole dish.
Once all fillet's are stuffed, drizzled with more melted butter and little black pepper.
Place in 450º oven for 12 to 20 minutes depending on how thick the meat is. Test meat at 12 minutes to see if flakey.

If haddock fillets are large and long, you can place in a casserole dish, place all stuffing on top of these large fillets and bake without rolling the meat. The rolled fillets just make a nice presentation.
