3 Eggs
2 Cups of shredded parmesan cheese
1 T of Dijon mustard
3 T's of oil
1 Package of chicken breast cutlets

Directions:
Directions:
In pie plate, whisk three eggs and dijon mustard.
In second pie plate, put parmesan cheese.
Put all the oil in a large skillet.
Rinse chicken in water.
Dredge chicken in eggs, then the parmesan cheese, then place in a medium high skillet.
Cook 4 to 6 minutes each side. Salt and pepper to taste.
Once cooked, place on plate with paper towels until ready to serve.
