1 chopped yellow onion
2 chopped celery stems
1 chopped garlic clove
1 or 2 pkgs. chicken thighs or thighs & legs (or whatever you have on hand)
1 Tbsp flour
1/2 cup dried rice
2 cans pureed tomatoes or diced tomatoes
Salt & Pepper to Taste

Saute onion, celery & garlic clove in a little butter and set aside. On medium-high heat throw chicken in a pan with a little oil & brown on both sides (about 20 min total). Can add the 1 tbsp. flour in the middle of browning the chicken so that the flour browns a little. Season chicken with salt. Add enough water to the chicken to cover it. Then add the 2 cans of pureed tomatoes and dried rice (rinse rice before adding). Cover & cook until the rice & chicken are done. Add about 1 tsp. dried or fresh oregano.

I also add 2 chopped carrots with the canned tomatoes! The carrots will cook until soft. Serve with flour tortillas (buttered!)
