1 medium pumpkin
1/4 c. soy sauce
2 T. packed brown sugar
1 (4 oz.) can sliced mushrooms (drained)
1 (10 oz) can condensed cream of chicken soup
2 c. hot cooked rice
5 lbs. ground beef
1 T. salt
1 minced garlic clove
2 c. chopped celery
2 c. chopped onion
1 c. chopped green pepper
salt and pepper to taste

Preheat oven to 375º. Lightly grease a 10" circle in the center of a baking sheet and set aside. Brown the meat, onions, celery, and garlic over medium heat; set aside. Cut out the stem of the pumpkin (with top) and reserve it as a lid for later. Remove all seeds and pulp. Combine meat mixture and all remaining ingredients and spoon it into the pumpkin; then cover with the pumpkin top. Bake 1 hour until the pumpkin is tender.

*This can get really soft after baking, so in the past I have kept the pumpkin top out of the oven until the last 10 minutes and just covered the mix with foil so that the presentation of the pumpkin looks a little better at the end. You will have to experiment and see what you prefer! :-)
