2 16 oz. cans whole beets
2 Cups white vinegar
3/4 Cups sugar
2 Tbsp pickling spice
1 1/2 tsp salt
12 hard-cooked eggs

Directions:
Directions:
Drain liquid from beets reserving 1 1/4 cups liquid. In a 3 qt saucepan over medium heat, heat beets, liquid, vinegar, sugar, pickling spice, and salt to boiling. Reduce heat to low and cover and simmer 10 minutes.
meanwhile in 2 qt. jar, layer eggs and beets. Pour vinegar mixture into jar; cover and let marinate in refrigerating at least 12 hours.
Serve as a side.
