1 cup onion chopped
3 cups celery chopped
1 tbsp butter
1 tsp salt
1/4 tsp white ground pepper

3/4 cup butter
3/4 cup flour
4 cups milk
1 lb (454g) Velveeta Cheese

2 lbs pre-cooked scallops (half-cooked)
2 lbs cooked lobster
2 lbs pre-cooked shrimp (half-cooked)

Directions:
Directions:
In a saucepan, cook onion, celery, butter, salt, pepper until onions are clear - do not brown.
Melt in 3/4 cup butter and flour to form a paste then add milk. When sauce mix is warm, add cheese. Heat but do not boil. Add seafood to sauce and simmer until shrimp and scallops fully cooked.
