7 unripe mangoes peeled and sliced
2 tbsp salt
1 1/4 cups white vinegar
1 tbsp Black pepper
3 tbsp minced Cilantro
3 minced cloves garlic
1 tbspn sugar
5 chopped Hot peppers (Scotch Bonnet)
5 tbsp Hot Sauce
1 1/4 cups water

Directions:
Directions:
Mix all ingredients together then add sliced mangoes, toss and let sit overnight. Toss occassionally. Adjust salt, garlic, peppers and cilantro to your own preference. Enjoy with a cool drink!

Can be stored on the countertop for 2 weeks if you wish it to sweeten/ripen. Otherwise refrigerate up to a month.
