1 Tbsp. vegetable oil
1 Tbsp. butter, melted
3/4 tsp. salt
1/2 tsp. pepper
1/4 tsp. garlic salt
1/2 tsp. dried thyme
2-1/2 lb. red potatoes, quartered
2 Tbsp. chopped dill or parsley

Directions:
Directions:
Preheat oven to 325º. In shallow roasting pan, combine oil, butter, salt, pepper, thyme, and garlic powder. Add potatoes; toss to combine. Roast, stirring occasionally, until lightly browned, about 2 hours. If desired, broil until crisp, about 4 minutes. Sprinkle with dill or parsley before serving.
