4 eggs, beaten
2 cups sugar
2 cups flour
2 teaspoons cinnamon
1 teaspoon baking powder
1 cup vegetable oil
1 cup canned solid-pack pumpkin
1/2 teaspoon salt
1 teaspoon baking soda
1 cup chopped nuts
1 cups raisins (optional)

FROSTING:
3 ounces cream cheese, softened
6 tablespoons butter, softened
1 tablespoon milk
3 cups powdered sugar
1 teaspoon vanilla

Directions:
Directions:
1. Preheat oven to 350º. Grease a large cookie sheet with 1-inch sides (aka "Texas Cake pan"); set aside.

2. Combine all ingredients for cake and pour into prepared pan. Bake for 25-30 minutes; cool completely.

3. Mix all frosting ingredients together and frost cooled cake. Cut into bars.

This says "bars", but is really more like a pumpkin Texas cake. You can also use the whole can of pumpkin and then decrease the oil to only 1/2 cup.
