6 ounces Jarlsberg cheese, shredded
1 package (12 ounces) frozen hot turkey sausage,
thawed (or any bulk sausage of your choice)
1 medium onion, chopped
1/4 teaspoon dried oregano leaves
Salad oil (optional)
1 package (10 ounces) frozen chopped spinach,
thawed and squeezed dry
8 large eggs
1 1/4 cups milk
1/2 cup Bisquick or buttermilk pancake mix

Directions:

1. Preheat oven to 375º. Grease an 11x7-inch glass baking dish; set aside.

2. In large skillet over medium heat, crumble sausage. Add onion and oregano; cook, stirring frequently, breaking up sausage with spoon, until well-browned and onion is tender. *If using turkey sausage and it seems dry during cooking, add 1 or 2 teaspoons of oil.

3. Remove skillet from heat and drain sausage mixture, if necessary; stir in spinach and cheese.

4. In large bowl, beat eggs, milk, and baking mix until well-blended.

5. Spoon sausage mixture into baking dish; pour egg mixture over.

6. Bake 35 minutes, or until knife inserted into mixture comes out clean. Cut into serving pieces.
