Ingredients: Ingredients for the crust : 1-1/2 cup vanilla wafers ( about 45 cookies ) 1/3 cup chopped pecans 1/4 cup melted butter
For the filling : 1 package 8 oz. cream cheese softened 2/3 cup confectioners sugar 2 Tbsps. Orange liquer 1 tsp. vanilla extract 1 cup whipping cream
For the topping : 1 cup granulated sugar 3 Tbsps. cornstarch 3 Tbsps water 2-1/2 cups fresh or frozen raspberries divided

Directions:For the crust : Combine wafer crumbs, pecans and butter. Press into the bottom and up the sides of a greased 9" pie plate.
For the filling : In a large bowl beat cream cheese, confectioners sugar, liquer and vanilla until light and fluffy. Fold in whipped cream. Spread into piecrust. Refrigerate until chilled.
For the topping : In a small saucepan,combine sugar and cornstrach ; stir in water and 1-1/2 cups raspberries. Bring to a boil. Cook , stirring constantly for 2 minutes, until thickened. Transfer to a bowl. Refrigerate until chilled. Spread topping over filling. Garnish with remaining berries. |

Notes: Have not made this, but looking at the picture in the newspaper....it's got to be delish !! How can anything with raspberries, cream cheese, whipped cream, etc. be bad???
