1 pkg. Kielbasa or Smoked Sausage
sliced into rounds,
4-5 potatoes peeled and cut into medium pieces, (I use white not red),
6 or more carrots cut into medium pieces,
1 large onion chopped,
1 tbl. garlic,
1 tbl. parsley,
chopped green onions (optional),
Salt, pepper, and garlic powder to taste
Oil to cover bottom of pot only

Directions:
Directions:
Peel and cut up potatoes, carrots and onions, and sausage.
Heat oil in heavy pot and add potatoes, letting them brown and stick, stir and add onions and sausage and saute for a few minutes on medium/high heat till onion is clear. This takes at least 10 minutes. Stir several times while sautéing, then add water to cover potatoes, scraping bottom of pot to get the dark bits up. Add carrots, garlic and parsley. Season with salt, pepper and garlic powder. Cover, turn heat to low and simmer till carrots and potatoes are done. Check to be sure stew isn't sticking. Add green onions if you wish and serve with hot rice. The stew should thicken as it cooks and you may need to add water to thin it out a bit. I mash a potato or two to thicken if necessary.

I always keep a canister of Wonder flour to use when I need to thicken gravies and stews. If you cut the veggies too small, it will just be mushy by the time its cooked, so the size is important.
