1 1/4 cups water
1 (14.25 oz) can reduced-sodium chicken broth
2 garlic cloves, minced
1 1/2 cups stone-ground cornmeal
1/2 cup (2 oz) shredded reduced-fat Swiss cheese
2 tbs. minced fresh thyme
1/2 tsp. salt
1/4 tsp. freshly ground pepper
1/4 tsp. ground red pepper
Olive oil-flavored vegetable cooking spray

Bring first 3 ingredients to a boil in a medium saucepan; reduce heat to medium. Add cornmeal, 1 tbs. at a time, stirring constantly, until smooth. Cook, stirring constantly with a wooden spoon, 5 minutes or until mixture is very thick; remove from heat. Stir in cheese and next 4 ingredients. Spoon mixture into an 8-inch square baking dish coated with cooking spray. Cover and chill 1 hour. Cut polenta into 6 squares. Coat both sides of polenta with cooking spray. Grill, covered with grill lid, over medium-high heat (350º - 400º) 3 minutes on each side or until browned. Serve immediately.
