4 - 6 medium chicken breast halves, bone in, with skin
1/2 cup flour
Salt and pepper
Garlic salt
2 - 3 handfuls of potato chips
Butter or margarine

Directions:
In a large plastic bag, mix together the flour, salt, pepper, and garlic salt. Wash chicken breasts and while still damp, shake in the flour mixture (one at a time) until well coated. Arrange all the chicken pieces skin-side up on a jelly roll pan that has been lined with foil and then sprayed with Pam. With your hands, crush the potato chips into medium-sized pieces and sprinkle liberally over the chicken. Add more salt, pepper, and garlic salt. Dot with butter or margarine. Bake at 325º for 45 minutes to an hour.

Nana Andy used to bake this chicken in a slow (275 degree) oven for a longer time than specified if she knew she'd be away from home in the late afternoon or when she attended a progressive dinner, for instance. The chicken always came out perfectly.
