1lb Chicken breast
2 tsp olive oil
1 pkg taco seasoning
1 onion chopped
1 glove garlic chopped
1 15 oz can chopped stewed tomato
1 4 oz can green chilies chopped
11/2 cup water
1 8 oz can red mild chunky salsa
1 15 oz can black beans
1 15 oz can pinto beans
Garnishments
Fritos
Shredded cheddar cheese
green onions
avocado

Boil chicken in 1 1/2 cups water. Once cooked keep water and chop chicken into small pieces. Set aside both and keep for soup. Saute onions and Garlic. Add all ingredients to chicken and water. Let stew, so that seasons marry.Salt and pepper to taste. Garnish with shredded mild cheddar cheese, frito corn chips, green onions, and sliced avocado.

Instead of boiling chicken, buy a pre cooked rotisserie chicken. Take meat off bone and add dripping from container with meat to 1 1/2 cups boiling water. Then follow directions as listed.
