1/4 cup of flour

2 large eggs

1 tbsp water

2 cups of Panko (Japanese bread crumbs)

1 cup of shredded coconut

1/4 tsp salt

1/4 tsp ground allspice

1 1/2 lb jumbo pealed / deveined shrimp

1/4 cup of canola oil

1/4 cup of pineapple preserves

1/4 cup of apricot preserves

1 tbsp horseradish

Place flour on plate. Combine eggs and water in a shallow bowl; in second bowl combine panko, coconut, salt and allspice.

Dip each shrimp in flour (coating both sides); shake off excess. Dip into egg mixture (allowing excess to drip off). Finally dip into coconut mixture. When most of the shrimp has been coated, preheat large saute pan on medium high for 2-3 minutes.

Place oil in pan. Add one-half of the shrimp to pan; cook 2-3 minutes on each side or until golden. Drain on paper towels; then repeat with remaining shrimp.

Combine remaining ingredients in microwave safe bowl and nuke it for about one minute and stir. Serve the sauce with the best coconut shrimp in the world.
