2 c grated cheddar cheese
1 lb sausage, Italian sausage, or hamburger crumbled and browned or 3/4 lb chopped ham
4 eggs
2 c milk
1 c Bisquick mix
1/4 t pepper
Salt to taste (use less salt if you use ham)
1 T Taco seasoning
Paprika
(Any other ingredient you might use in omelets would work as well)

Directions:

Preheat oven to 375. Place meat and cheese in a greased pan.
Combine eggs, milk, salt, pepper and Bisquick mix in a blender; blend one minute on high. Pour this mixture over meat and cheese. Sprinkle with paprika.
Bake at 375 degrees for 35-40 minutes or until casserole is firm in the middle.

This recipe freezes very well. After baking in a disposable aluminum 9x11 pan, cool the casserole, wrap in aluminum foil and freeze.

This casserole recipe is from the Salvation Army Homeless Feeding Program. Each casserole feeds 10 people. Every week the Salvation Army uses approximately 125 casseroles. If you would like to contribute to this program with frozen, prepared casseroles, you can contact the Salvation Army at 515.282.3599.
