1 lb. sharp cheddar cheese
2 sticks butter, at room temperature
2 cups all-purpose flour
1 tsp. salt
1/2 tsp. ground red pepper
Pecan halves, one for each wafer

Directions:
Into a medium bowl, grate the cheese. Mash in the butter until well combined. Mix in the flour, salt and pepper until you have a smooth dough. Shape the dough into 2 logs, about 1 1/2 inches wide. Refrigerate until well chilled, about 2 hours. Preheat oven to 350º. Cut each log into 1/4 inch slices and place on ungreased cookie sheets. Place a pecan half on each slice. Bake until lightly colored, about 11 minutes. Transfer to wire racks to cool.
