Chipotle-Glazed Shrimp Recipe

2 T olive oil
1 cup finely chopped onion
4 garlic gloves, minced
1 t dried oregano
2 t ground cumin
1 cup water
¼ cup apple cider vinegar
2 T chopped canned chipotle chilies
1-1/2 lbs uncooked jumbo shrimp, peeled and deveined
¼ cup orange juice
2 T golden brown sugar

Heat oil in med skillet over med heat. Add onion and cook until golden brown. Add garlic, cumin and oregano. Transfer to a blender. Add 1 cup water, vinegar and chipotles to blender and puree until smooth. Transfer half of puree to med bowl and cool. Add shrimp to bowl and toss. Cover and chill for 2 hours. Pour remaining puree into med saucepan. Add orange juice and brown sugar. Bring to a boil. Reduce heat and simmer until glaze is slightly thickened and reduced to ½ cup, about 10 mins. Cool.
Prepare grill. Remove shrimp from marinade and pat dry with paper towel. Brush shrimp with some orange juice glaze and grill until opaque, brushing occasionally with move glaze. Grill about 2 mins per side.
Can be served on their own or with pasta.
