¾ c. flour
¼ tsp. salt
1 tsp. baking powder
1 ½ tsp. ginger
1/3 c. sugar
½ c. salad oil (Wesson-type)
1/3 c. light molasses
1 unbeaten egg
½ c. finely chopped nuts

Directions:
Directions:
Sift flour, measure; add salt, baking powder, ginger; sift again onto waxed paper. Mix sugar, salad oil and molasses in a large bowl. Add egg to molasses mixture; blend thoroughly. Add sifted dry ingredients; stir, then add nuts and blend well. Mixture will be fairly stiff.

Drop teaspoonfuls of mixture on greased baking sheet, about 4” apart, 6 to a sheet. With back of spoon spread into circles about 3” across. Bake 20 minutes** in 300 degree oven. Press spatula down firmly on pan, slip it under cookie, turn cookie upside down on board. Do only 2 at a time—speedily! Quickly roll cookie over hand of wooden spoon—or simply roll up by hand. Place on waxed paper, flap side down—to cool. Do 2 more, etc. (If cookies harden before rolling, put back in oven a minute to soften)
Time in oven may vary—underbake rather than overbake—should not get dark brown.

Makes about 24 Scrolls

**20 Minutes is too long. Check after 8 minutes.

NOTE: You’ll save time if you bake 12 at a time (6 to a sheet) putting the second sheet in after first has been cooking 10 minutes.
