1 10 oz. pkg frozen spinach
1 T. chopped onion
1/4 cup butter
1/4 cup flour
4 eggs, separated
1 cup milk
1 cup grated cheese
1 t. salt
1/8 t. pepper

Directions:
Directions:
Cook spinach according to package and drain. Saute onion in butter. Stir in flour and milk; cook until thick. Remove from heat and add cheese, spinach and seasonings. Beat egg whites until they form stiff peaks. Beat egg yolks until they are thick and lemon colored, then stir egg yolks into the spinach mixture. Fold in egg whites. Pour into a well buttered souffle' dish. BAke 350º for 45 minutes or until set.
