10 lbs of chicken leg quarters

1 cup of lemon juice

1 cup of Mojo Crillolo (Spanish cooking sauce)

1/2 cup salt

1/2 cup pepper

1/2 cup garlic powder

1/2 cup vinegar

Directions:
Directions:
Remove fat and skin from chicken quarters.

Cut chicken on the joint between the thight and the leg.

Using one of the techniques below, mix chicken, salt, pepper, and garlic powder, making sure to coat all of your chicken pieces.

Place the chicken inyour container and then add the lemon juice, Mojo crillolo, and the vinegar.

There are 2 preparation techniques:

1. Find a large enough pan to hold your chicken and place a plastic bag inside. Fill the bag with your chicken and tie firmly after all the ingredients have been added.

2.(My favorite) Buy a clean 5 gallon bucket and lid from Home Depot.


After your chicken has marinated for atleast 8 hoursyou can bake it in your oven at 350º (covered) for 1.5hrs, or for best results, cook it up on the barbeque for a great tropical taste, which is pretty close to Pollo Tropical.

I find that the leg quarters work best, but any combination of chicken pieces will do. You need to prep this at least 8 hours in advance.
